Tasting notes
Etichetta nera is, first and foremost, a full expression of the terroir. Its straw yellow colour smells of freshly-mown grass, white flowers, medlar and yellow citrus fruits. Creamy on the palate, citrusy, full of character, savoury and intense in its ability to evoke tropical fruits and herbs. It closes with a very long finish, with mineral persistence and almond highlights.
Pairings
Always intriguing as an aperitif with sweet green olives, cashews and savoury croutons, it goes very well with raw fish, smoked salmon and creamed cod. Definitely worth trying with pasta and risotto, served with seafood or vegetable sauces, vitello tonnato, eggs with asparagus and delicate main courses featuring chicken. Exciting with Robiola di Roccaverano cheese.
